SANITATION under FSMA & USDA Logan UT - Feb 2019, Bridgerland Technical College (East Campus), Tuesday, 12. February 2019

This workshop normally costs about $399 per person.  The Bridgerland Custom Fit program is sponsoring this workshop and reducing the cost to $149-$250pp. (Qualified companies get the lower rate - contact Custome Fit).  You will only pre-register here (no cost to "pre-register").  Please provide participant names and emails so that certificates can be sent there.  Enrollment and payments are via the Custom Fit program.  After you register here, someone from the Custom Fit Program will contact you.



A FSMA food safety system places greater emphasis on both GMP level sanitation and sanitation as a "preventative control".  21 CFR 117 Part B has new requirements regarding sanitation and we find that when a hazard analysis indicates, sanitation is a "preventative control". For companies who have not yet addressed FSMA, sanitation is none-the-less important. Participants from all aspects of a food operation will benefit from this workshop, including USDA (Meats).  We will compare Pre-operational and Operational SSOPs to FSMA-FDA based sanitation programs.  FSMA or HACCP training is not a prerequisite or required.  However, this workshop will compliment both.

The Workshop (2 days)(~12 h)

Day 1:  8:30 am - 4:30 pm  |   Day 2:  8 am - 3:30 pm  

Agenda:  1. Hazards related to sanitation: soil, microbes, allergens.  2. Sanitation GMPs 21 CFR 117 Part B and SSOPs from USDA FSIS 9-CFR-416.  3. Group discussion on sanitation as a prerequisite program.  SOPs.  4. Environmental related food microbiology (Listeria and Salmonella)  5. Sanitation under FSMA (Sanitation as a Preventive Control Program). 6. Verifications of sanitation (discussions of environmental testing, ATP monitoring, etc.).  7. Plant visit to Pepperidge Farms (Richmond, UT).  

Printed notes will be provided.  Lunch provided both days.  Snacks and beverages are also availale.

Who should attend? Sanitation leaders, food safety proferssionals, anyone involved in food production and operations.
Each company should have at least one Sanitation leader in their food safety system.  Retail and foodservice supply chain professionals and food auditors should also attend this training to understand what their suppliers are mandated under the new FSMA rules.  Food Safety and Quality Professionals, Maintenance-Production Supervisors and Leads, Sanitation Supervisors, Plant Managers, Training Supervisors, Lead Technicians, Packaging Supervisors and Managers, or Regulatory Personnel are encouraged to attend.  Each supervisor expected to sign off (verify) food safety data should be "Qualified Individuals". 

Q: Does USDA FSIS or FDA FSMA REQUIRE this training? No. This is knowledge for knowlege's sake!

Q: How does HACCP or FSMA PC fit in?  A: Sanitation is an integral part of both HACCP and FSMA Preventative Controls. Likewise sanitation is integral to any USDA FSIS food safety program.

Instructor: Dr. Nummer is a food safety specialist and experienced food safety trainer with over 25 years experience.  He is a Lead Instructor for the FSPCA FSMA Preventative Controls course.  He has aalso taught a sanitation workshop for the past 10 years.  This year the workshop has been updated to incorporate the new Sanitation requirements in FSMA Preventative Controls.
